In the CSA drop off this week, I got a ton of apricots. I don’t particularly care for them, but figured I could make something yummy before they went bad. The below did come out a little sour from the lemon juice, so I would suggest upping the sugar to 1/3 cup in the fruit filling if you’ll be bothered by that.
Apricot Crisp
Preheat oven to 375.
Bunch of apricots; pitted and diced (15 or so)
1/4 cup of sugar
1 tbl spoon lemon juice
3/4 cup of oats
3 tablespoon melted butter
1/2 tsp cinnamon
1/4 cup flour
Good squirt of Agave nectar
Mix sugar, lemon juice, and apricots. Add to pan.
Mix other ingredients together, and spoon on top of apricot mixture.
Bake at 375 for 35-40 minutes.
I enjoyed it warm with a little Greek yogurt. YUM.
