Jenna: Mixing it Up

I LOVE to eat out. It’s one of my favorite things to do. I’ll often fall into a rut in the kitchen, and my instinct to spend way too much money on not-always-good choices will kick in.

A good way for me to snap out of this is by mixing it up in the kitchen. I am a creature of habit in a lot of ways, so repeating recipes often can sometimes happen. You don’t always need a ton of ingredients to get a little creative! Here is something I whipped up tonight after seeing a few versions float around on Pinterest.

To prepare, cut an avocado in half. Carefully place an egg in each half (scoop some extra avocado out and promptly eat so you have a little more room). Pop it in the oven at 400 degrees for about 7 minutes. If you choose, sprinkle some Parmesan or mozzarella cheese on at this time, and pop it back in the oven for another 7 minutes or so (timing can vary based on how dippy you like the egg).
Then,  top with plain Greek yogurt, hot sauce, or any other delicious things you can think of.

I also baked two salmon fillets, made quinoa and sautéed some veggies for some quick lunches and dinners this week.

Some ideas to “mix it up” so you don’t get bored with the same old healthy eats you may find yourself making over and over:
-Buy 2 new veggies you’ve never made before and google some recipes on how to prepare it
-Prepare your favorite veggies in a new way. Roast, grill, dehydrate…get crazy.
-Explore the ethnic sauces aisle. It’ll change your life.
-Actually MAKE something on that “healthy eating” pin board you have.
-Invite friends over! You’ll be more creative when you have someone to impress 🙂
